Smokey Sweet Potato Noodles with Hickory Bacon and Baby Spinach
2 Servings
Ingredients:
1 Large sweet Potato
1T Olive Oil
1 Pinch Red Pepper Flakes
½ c. Chopped Sweet Onion
½ c. Chopped Hickory Smoked Bacon
¼ c Chicken Broth
4 Large Basil Leaves
3-4 c Packed Baby Spinach
Directions:
1. Spiralize* Sweet Potato and set noodles aside. (I prefer to leave the sweet potato skin on for an extra nutrition boost, but you are welcome to peel it off if you don't care for it.)
2. Saute onion and garlic in oil for 2 minutes. Add bacon and saute until crisp.
3. Add broth, sweet potato noodles, and basil. Toss and saute 2 minutes.
4. Last add the spinach and allow to wilt.
